The story behind chicken fajitas
Fajitas are one of the most popular dishes in Mexican cuisine. It is a fajita dish, but what exactly are fajitas? Fajitas come from the word faja which means «belt» or «strip.» This makes sense because fajitas are traditionally served with sliced onion and bell pepper strips on top of grilled meat. The first time fajas were served was at a restaurant called El Charro in Monterrey, Mexico in 1943. Today fajitas can be found everywhere! There are many variations to this delicious dish that you can enjoy cooking at home or ordering for delivery through an app like uber eats.
It is said that fajitas de pollo were first served in a small town called Piedras Negras, near the US-Mexico border. The history of fajitas goes back to 1918 when soldiers from Fort Duncan Air Base would come into this small Mexican restaurant where they’d order beef steaks and corn tortillas.
However, chicken fajitas were not invented by accident – the owner of this small Mexican restaurant would take some meat scraps and throw them on a sizzling hot pan. The soldiers didn’t mind at all because they loved it so much! Fajitas de pollo is still very popular in restaurants across America nowadays.

The fajita meat is usually marinated in lime juice and spices before being grilled. They’re then served fajita-style (on flour tortillas) with onion, cilantro, and a side of fajita.

Fajita de Pollo: 3 Different Recipes
Chicken fajitas recipe 1:
Ingredients:

- 3 chicken breasts
- 1 lime
- 1 medium onion
- 3 bell peppers red, orange, yellow, or green
- 3 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon cumin optional
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- Salt to taste
Steps:

- Cut the onion and peppers into small pieces.
- In a small mixing dish, whisk together 1 tablespoon olive oil, the juice of half a lime, chili powder, paprika, onion powder, pepper, cumin and salt. Toss the spice-rubbed chicken with your hands.
- Preheat 1 tablespoon olive oil in a saucepan over medium-high heat. Add half of the chicken and cook for 3-5 minutes, or until thoroughly cooked.
- Remove the chicken from the pan and set aside. Repeat with the remaining chicken.
- In a separate dish, dissolve 1 teaspoon of the cornstarch in 1/4 cup cold water. In a medium saucepan, heat chicken broth and oil over medium-high heat. Bring to a boil while stirring constantly. Once boiling, add the pineapple juice, then whisk in the remaining cornstarch slurry and cook for 2 minutes more
- Squeeze additional lime overtop and serve over tortillas.
Chicken fajitas recipe 2:
Ingredients:

- 1/2 cup plus 1 tbsp. extra-virgin olive oil
- 1/4 cup lime juice, from about 3 limes
- 2 tsp. cumin
- 1/2 tsp. crushed red pepper flakes
- 1 lb. boneless skinless chicken breasts
- Kosher salt
- Freshly ground black pepper
- 2 bell peppers, thinly sliced
- 1 large onion, thinly sliced
- Flour tortillas
Steps:

- In a mixing dish, combine 1⁄2 cup oil, lime juice, cumin, and red pepper flakes. Season the chicken with salt and pepper before adding it to the mixture and tossing to coat.
- Allow to marinate in the fridge for at least 30 minutes and up to 2 hours.
- After the chicken has marinated for 30 minutes, set it aside. Remove and discard the rosemary sprigs from the pan. Heat 1 tablespoon oil in a large skillet over medium heat. Add the chicken and cook for 8 minutes per side, or until golden brown and cooked through.
- Allow to rest for 10 minutes before cutting into strips.
- In a skillet, heat the olive oil over medium heat. Add the peppers and onion and cook for 5 minutes, or until soft.
- Toss the chicken with oil and lime juice in a large mixing dish. Serve with tortillas.
Chicken fajitas recipe 3:
Ingredients:

- 2 lbs. boneless skinless chicken breasts rinsed and cut into thin strips
- 3 tri-colored peppers (green, red, and yellow) thinly sliced
- 1 onion cut into slices and then cut into half moons
- 2 tbsp lime juice
- 2 tbsp oil
- 1/4 cup fresh cilantro chopped
- 3 garlic cloves minced
- 1 tbsp chili powder
- 1/2 tsp ancho chili powder
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp paprika
- 1/2 tsp salt or to taste
- Flour tortillas
- Corn tortillas
- Sour cream
- Homemade guacamole or store bought
- Lime wedges
- Additional chopped cilantro
Steps:

- Rinse and slice the chicken breasts into thin strips. Place them in a container.
- Mince and peel the garlic cloves.
- Rinse and chop cilantro.
- Add the chili powder, ancho chili powder, cumin, oregano, paprika, salt, garlic, cilantro, and lime juice to the chicken strips and mix thoroughly.
- Cover the bowl with plastic wrap, then refrigerate it for 15-30 minutes.
- In the meantime, wash and cut the peppers into thin slices. Remove any pepper membranes or seeds you don’t want to consume.
- To make half-moons, cut the onion into rings and then straight down the middle.
- Preheat a cast iron skillet over medium heat.
- Add the oil and let it heat for a second or two.
- Add the peppers and onions, as well as salt to taste, and cook for 5 minutes. Stir and cook for another 2 minutes or until the vegetables are crisp-tender.
- Remove the veggies from the pan and set them aside.
- Heat the cast iron skillet over medium-high heat. Add a tablespoon of oil to the pan. Allow the oil to heat up in the skillet.
- Stir in the chicken and continue to cook on medium high for 5 minutes, or until the pieces are browned. Stir in the meat and simmer for a few more minutes, or until thoroughly cooked through.
- Remove the chicken strips from the pan and set them aside. Allow the pan to reheat before adding new chicken strips. If necessary, add extra oil.
- Continue cooking the rest of the chicken strips in the same manner until they are all finished.
- You may then combine the chicken, peppers, and onions to make fajitas. Serve with tortillas and additional chopped cilantro, sour cream, and guacamole.
